Summer recipes taste best when they’re quick, easy and packed full of flavour. No one wants to hang around in the kitchen when the sun is out, and punchy-tasting food is best for dining al fresco with friends – which I feel we will be doing a lot of this year.

Summer cooking also shouldn’t get you in a sweat. A Sunday Roast may be sacrosanct, but on a bright and sunny day, a simple green salad beats multiple cooked veg – and a creamy tarragon-spiked roast chicken will allow you to get your traditional fix.

While a quiche is ideal for a picnic in the park, it needs a tart tin and fiddly blind baking of pastry, so why not whip up a simple galette instead. If you’re more time-conscious, ready-made ­shortcrust pastry will do the trick – but if you’re all about getting creative in the kitchen, try whipping up your own at home. Make it with thick flakes of parmesan for a creamier taste and texture.

Don’t fret if you’re on food duty this summer – you don’t need a huge repertoire: just simple things done well. A classic chilled gazpacho, freshly-grilled fish with salad and a strawberry gelato with a secret flavour-booster will all go down well, no questions asked. In terms of cocktails, think citrusy and refreshing and don’t forget a smasher of a cake for all those summer celebrations.
